All six of our dining venues structure their menus around ingredients sourced from local farms, emphasizing variety and choice for our residents from morning to night. Executive Chef Jody McLeod leads a talented team of chefs, drawing on elements of diverse cultures and cuisines as heās done in leading restaurants and hotels worldwide.
Jody McLeod began his professional career with a classical Canadian apprenticeship working in a variety of restaurants and hotels where he was able to gain experiences in many cuisines. Canadaās diverse culinary tapestry encouraged his interest in travel so when an opportunity arose to work with the Leading Cruise line Holland America, he eagerly accepted. His travels took him to over 90 countries and 380 cities. Since leaving the cruise industry Jody was the Executive Chef for the I.O.C international Olympic committee for the 2010 winter Olympics in Vancouver. Executive Chef for SeaWorld INT and just before landing here at Carolina Meadows was the corporate chef for Duke University.
Todd is an honors graduate of the Culinary Institute of America in Hyde Park, New York where he developed a passion for food and service. He went on to study hospitality management at Florida International University in Miami. Todd has more than 20 years of experience as a chef and leader in restaurant operations. He was a personal chef for the Versace family in South Beach, managed banquet operations at Fearrington Village and held various leadership roles in restaurant operations and ownership. Todd also has more than nine years of senior living experience, having previously led the dining operation of The Cypress of Raleigh, an upscale CCRC serving 300+ residents.
