Starring fall/winter produce
Emily Potosky, MS, RD, LDN, Carolina Meadows Dietitian
Colder weather has arrived, but you can still find produce in season. Apples, beets, Brussels sprouts, cranberries, sweet potatoes, and winter squash are just a few fruits and vegetables that are growing right now. For a complete list of seasonal produce, click here.
Produce Highlights
Brussels sprouts are a good source of fiber, vitamin C, folate, and antioxidants like carotenoids. They’re great roasted, steamed, or shaved and served fresh in salads.
Sweet potatoes are a great source of vitamins A and C, fiber, potassium, and B vitamins. You can bake, boil, or mash them.
Winter squash come in many varieties, including pumpkin, acorn squash, spaghetti squash, and butternut squash. These are high in carotenoids, vitamin C, vitamin B6, fiber, magnesium, and potassium. These are very versatile and can be prepared any number of ways. Try them roasted, cubed in stew, or even cooked in the microwave.
